Akashi-Tai Junmai Daiginjo Genshu is the flagship sake from Akashi Sake Brewery, a boutique artisanal producer located in Akashi City, Hyogo Prefecture, Japan. Established in 1886, the brewery has a rich history of crafting premium sakes using traditional methods and locally sourced ingredients. This particular sake is meticulously brewed using Yamadanishiki rice, renowned for its superior quality, grown in Hyogo Prefecture. The rice is polished down to 38% of its original size, allowing the brewers to extract the purest flavors. The fermentation process spans two months, during which the sake develops its distinctive characteristics.
On the nose, this sake presents a bouquet of melon, lemon, bitter orange, sage, and subtle herbaceous notes. The palate is harmonious, balancing citrus flavors with a rich minerality, leading to a long-lasting finish. With an alcohol by volume (ABV) of 16%, it is best enjoyed chilled, between 7-15°C, in a fine wine glass to fully appreciate its intricate flavors. This versatile sake pairs excellently with dishes like sea bream carpaccio with yuzu and sesame seeds, tuna tartare seasoned with chili and ginger, grilled white fish, pork medallions with truffle, and roasted shellfish.
