Akishika Okarakuchi Super Dry Junmai Ginjo Muroka Nama Genshu is a remarkable sake from Akishika Shuzo, a distinguished brewery nestled in Nose, Osaka Prefecture. Established in 1886, Akishika Shuzo has been crafting exceptional sake for over a century. Under the leadership of sixth-generation owner and master brewer Hiroaki Oku, the brewery has embraced a philosophy of "ikkan-zukuri," meaning production from seedling to sake. This approach ensures meticulous control over quality, as the brewery cultivates its own Yamada Nishiki rice, renowned for its superior sake brewing properties. The rice is polished to 60%, and the sake is produced using a unique fermentation method that dissolves a high portion of the fermentation rice while maintaining low amino acid levels, resulting in a medium-bodied yet flavorful and complex profile.

This unpasteurized, unfiltered (muroka nama) sake is undiluted (genshu), presenting a robust and full-bodied character with an alcohol content of 17%. True to its "Okarakuchi" designation, meaning super dry, it boasts a Sake Meter Value (SMV) of +15, indicating an exceptionally dry profile.
