When brewing Erguotou, brewers meticulously follow the traditional method of "cutting the head and tail to take the heart," which involves discarding the first and third portions of the distillate and only taking the prized "heart" from the second pot. Niulanshan Erguotou proudly upholds this heritage and was awarded the "National Erguotou Original Production Area Certification" on September 4, 2002.
