Castellare di Castellina's I Sodi di S. Niccolò 2019 is a distinguished expression of Tuscan viticulture, embodying the estate's dedication to native grape varieties and traditional winemaking techniques. Established in the heart of the Chianti Classico region, Castellare di Castellina has consistently showcased the potential of indigenous varietals. This flagship wine is a blend of 85-90% Sangioveto and 10-15% Malvasia Nera, sourced from meticulously tended vineyards with optimal sun exposure and well-drained soils comprising calcareous marl and clay. The grapes undergo separate fermentations in stainless steel tanks at approximately 25°C for seven days, followed by about 20 days of maceration on the skins. The wine is then aged in barriques, 50% of which are new, for 24 to 30 months, and further refined in the bottle before release.
The 2019 vintage presents a deep ruby color with garnet reflections. The nose is notably fragrant, offering aromas of patchouli, potpourri, Turkish Delight, rose, caramelized red berries, and a hint of smoke and incense. On the palate, it is rich and full-bodied, with flavors of dark cherries, sweet light tobacco, and herbal notes like thyme and rosemary. The wine exhibits a robust tannic structure, balanced acidity, and a persistent finish, suggesting excellent aging potential. This complex and concentrated wine pairs exceptionally well with cold cuts, flavorful meats, and strong, aromatic cheeses, particularly Pecorino Toscano and Parmigiano.
