Kiku no Sato Shuzo, originally established in 1866 and reborn in 1955, is a small-scale brewery renowned for crafting beloved sake lines like Ichiryu and Kimi no Tomo. Operated by two generations of the Akutsu family and two employees, the brewery produces just 400 koku annually, equivalent to 40,000 1.8-liter bottles. The brewery operates only from late October to early April, under the guidance of chief brewer Makoto Akutsu, who strives to create full-bodied, balanced sake that enhances the flavors of meals.
Their extra dry Junmai sake is made with Gohyakumangoku rice from the Nasu highlands. It has a soft mouthfeel and a refined dry finish that highlights the sake's rich umami. This versatile sake can be enjoyed both warmed and chilled, and pairs well with dishes such as fish boiled in sweet soy sauce broth, stewed dishes, and stir-fried foods.
