Product details
Established in 1948, Daishinshu is a family-owned sake brewery nestled in the scenic Nagano Prefecture of Japan. Led by head brewer Tetsuya Kusunoki, the brewery is committed to producing premium-quality sake that reflects the unique terroir of the region. The water used in their brewing process is sourced from natural springs, filtered through the area’s volcanic soil, imparting a distinctive character to their sakes. Daishinshu is also dedicated to using native rice varieties, particularly Miyama Nishiki, a revered grain that contributes to the rich, full-bodied, and complex flavor profile their sakes are celebrated for.
Known for its craftsmanship and tradition, Daishinshu offers a luxurious sake that is exceptionally balanced, honoring the legacy of its first Toji, regarded as the "father" of sake brewing. The sake is elegant and luscious, with tasting notes of pineapple, rose, and coconut cream, perfectly showcasing the expertise of the brewery. It pairs beautifully with refined dishes such as caviar, speck with persimmon, or creamy triple-crème cheeses, making it a perfect choice for sophisticated culinary experiences.
