Under the guidance of fifth-generation toji (master brewer) Saori Kobari, the brewery upholds traditional brewing techniques such as funashibori (vat press) and small-batch production, ensuring each vintage offers a unique expression reflective of the year's nuances. The sake is brewed using locally grown Yume no Kaori rice polished to 60%, resulting in a Tokubetsu Junmai of exceptional quality. This special junmai honors the legend of the "Tengu," a big-nosed spirit known to bring good luck. The sake is presented in a 600ml bottle, each individually hand-painted, ensuring every bottle is truly unique.
