DASSAI Ambition represents Asahi Shuzo's pursuit of excellence in sake brewing through its innovative "Yamada Nishiki Project." Launched in 2019, the project was designed to inspire Yamada Nishiki rice farmers, giving them a platform to showcase their finest rice through an annual contest. Known as the "king of sake rice," Yamada Nishiki traditionally faced selection criteria that prioritized large shinpaku (white heart) size. However, this often led to rice cracking during high polishing. To address this, Asahi Shuzo introduced a new standard in 2021, focusing on smaller, more centered shinpaku, which was embraced by farmers nationwide. This evolving process led to the creation of DASSAI Ambition, a sake made from the finest Yamada Nishiki rice, with entries growing from 45 in the first contest to 144 by 2023.
In line with the Japanese concept of "Shuhari," DASSAI Ambition incorporates both tradition and innovation. The sake is stored in titanium bottles, which allow for quick temperature regulation and better preservation during the pasteurization process. Asahi Shuzo also employs the Tōmin liquid freezing technique, keeping the sake at minus 30 ℃ to maintain freshness until just before consumption. This approach, moving away from glass bottles, ensures the highest quality and flavor preservation, showcasing Asahi Shuzo's commitment to continuously refining their craft to deliver exceptional sake experiences.
