Water is the foundation of liquor, and the Xuanwu Ancient Spring is the source of the water used in making Du Kang liquor. This spring water contains over 40 trace elements beneficial to human health, such as selenium and strontium. The high-quality water, combined with the unique microbial community in the brewing environment, creates a mellow Du Kang liquor. Du Kang liquor is made from sorghum and wheat, grown in the natural geographical environment of the brewing site. The liquor is brewed using ancient techniques such as "three steaming, three brewing, five leveling, and six methods", the single-grain solid-state fermentation, and traditional techniques like a fork-loaded steamer, old-style steamer, the timing for wine extraction, manual brewing, mixed steaming and burning, and quality selection for wine picking.
Du Kang liquor's brewing is closely related to the invention of Shu wine from empty mulberry leaves and spoiled rice by the wine ancestor Du Kang. The cellar pits cultivated with mulberry mud are conducive to the cultivation and survival of microorganisms, giving Du Kang liquor a unique aroma. Over 600 beneficial microbial communities inhabit the pits, producing nearly a hundred aromatic and flavorful substances, ensuring the richness and sweetness of Du Kang liquor. Fill a cocktail shaker with ice cubes. Add Dukang Jiuyuan 8 Years Baijiu, honey syrup, fresh lemon juice, and a dash of Angostura bitters to the shaker. Shake well until chilled. Strain the mixture into a chilled cocktail glass. Garnish with a lemon twist. Serve and enjoy!
