The brewery, led by Atsunori Takeshima, the fifth head of the family, embraces the traditional mellow sweetness of local sake, bringing it to the forefront of their production. The Sensation Black sake boasts a fresh aroma of young grass, pandan, green apple, and strawberries. Its soft sweetness is perfectly balanced by rising acidity, creating a rounded yet firm mouthfeel with a crisp, mineral-enhanced finish. The bitterness from yeast-derived succinic acid adds complexity and makes it a versatile pairing option.
