Fenjiu aged for 20 years is bottled in ceramic containers, which have tiny pores allowing the strong liquor to "breathe." This breathing process is actually a chemical reaction between oxygen and alcohol. Although you can't turn 20-year-old Fenjiu into 30-year-old Fenjiu, the quality of this strong liquor will improve during the aging process. After one year, the aroma of this liquor becomes even more complex, the structure smoother, and the aftertaste more lingering.
Combining the characteristics of wheat, one of the traditional raw materials in the brewing industry, with the use of the specially bred and developed koji and craft-specific wheat "Yimai 7" by the Agricultural Research Institute, the application of high-temperature koji produced from this specific wheat for koji making has greatly improved the sensory and physicochemical indicators as well as the quality rate of the finished koji. This has increased the yield of raw materials and the rate of high-grade raw liquor, resulting in significant improvements and enhancements in the internal indicators of the raw liquor.

Fenjiu, known as the oldest Chinese liquor, boasts a brewing history spanning 6,000 years, making it an integral part of China's liquor culture. The traditional brewing technique of Shanxi Xinghua Village's light-aroma Fenjiu is not only the core of its production but also a highly representative brewing method of Chinese liquor, embodying the essence of authentic traditional liquor-making practices. The brewing process uses high-quality sorghum and 800-meter-deep underground water, with barley and peas as koji ingredients.
