Fukucho "Forgotten Fortune" Junmai Sake is a testament to the dedication and innovation of Miho Imada, the owner and toji (master brewer) of Imada Shuzo in Akitsu, Hiroshima. Established in 1868, the brewery is renowned for its commitment to traditional sake-making techniques. Imada-san spent over a decade reviving Hattanso, an heirloom rice variety that had fallen out of use due to its cultivation challenges. Her perseverance led to the creation of this unique sake, brewed exclusively with Hattanso rice polished to 70%, allowing for a rich expression of the rice's natural flavors and complexity.
This Junmai sake offers a full-bodied profile with earthy undertones and a smooth texture, culminating in a long, persistent finish.
