Like Quintarelli's famous Amarones, Alzero is crafted using the appassimento method, where grapes are carefully harvested and left to dry until mid-December, intensifying the flavors. The blend consists of 40% Cabernet Franc, 40% Cabernet Sauvignon, and 20% Merlot, giving it a unique identity that sets it apart from typical Bordeaux or Super Tuscan wines. This wine undergoes an extended aging process, spending two to three years in French oak and an additional four years in large Slavonian oak casks, creating a wine of immense complexity and depth.
Alzero’s vinification is as meticulous as its aging process. The grapes, selected with precision at the end of August, are dried on rush mats or in wooden boxes before being pressed in mid-December. Following a 20-day maceration, indigenous yeasts initiate a slow, 50-day fermentation, which continues during the years of barrel aging.
