Named for the famed samurai broadsword, ‘Katana’ Junmai Ginjo is similarly sharp, dry, and bold. Full-bodied with notes of melon and almond, with almost no perceptible sweetness. An excellent pairing for richer cuisine like yakitori. Made from local Shizuoka rice polished to 60%.
The first thing you’ll notice when you pour out your first glass of this sake is its color, a tantalizing white gold hue. This hints at the sake’s longer-than-normal brewing process, which helps develop a distinct medium-dry quality.
