Heiwa Doburoku Ichi no Daku Nigori Sake is a modern expression of Japan’s oldest form of sake, doburoku, crafted by Heiwa Shuzou. In 2022, Heiwa opened a dedicated Doburoku bar in Tokyo’s Kabutocho district, aiming to introduce this traditional sake style to a broader audience. "Ichi no Daku" is the first release in their series and is made using locally grown Nikomaru rice, which lends a subtle aroma and a gentle sweetness reminiscent of freshly steamed rice. The cloudy mash, or Moromi, is retained, creating a more sustainable brewing process while delivering a fresh, bright flavor profile from its fermentation.
Best enjoyed chilled, this nigori sake pairs beautifully with diverse flavors, making it an excellent companion to dishes like Thai curry, pizza, and Crab Rangoon.
