Product details
Nestled in Wakayama Prefecture, Heiwa Shuzo has been crafting exceptional sake since its founding in 1928. Despite the region's typically warm climate, the basin where the brewery is located experiences cold mornings and evenings, providing ideal conditions for sake production. With a deep commitment to quality, Heiwa Shuzo combines the region’s rice, pure water, and climate to create sake that reflects the craftsmanship and philosophy of its makers. This dedication extends beyond sake to natural fruit liqueurs made without additives or coloring. Their guiding principle, "Men created sake, sake created men," highlights the symbiotic relationship between the master craftsmen and their craft.
The KID range, inspired by the Kishu climate and named to symbolize innocence and freedom, aims to introduce sake’s charm to new generations. Employing a unique “Binkan Hiire” method, some KID sakes undergo a gentle pasteurization process that preserves their freshness and flavor. KID Daiginjo, a frequent winner at international competitions, entices with aromas of ripe apples and pears, followed by a rich honey sweetness and a dry, crisp finish. Best enjoyed chilled, it pairs beautifully with fatty tuna, eel, and blue cheese.
