The Laobaigan flavor type was officially included as the eleventh major flavor type of Chinese Baijiu in 2004, with Hengshui Laobaigan as its representative. Hengshui Laobaigan originated in Hengshui City, Hebei Province, and its history can be traced back to the Ming Dynasty. It is said that during the Ming Dynasty, the brewing techniques in the Hengshui area were quite advanced, and Hengshui Laobaigan gradually formed against this historical background. It carries the accumulation of local brewing traditions and culture, becoming one of the representatives of the local liquor culture.

Hengshui Laobaigan selects high-quality sorghum, wheat, and other grains as raw materials, ensuring the taste and quality of the liquor. During the brewing process, it adopts the method of fermentation in mud cellars, where the raw materials are placed in cellars made of soil for natural fermentation. This is a unique feature of Hengshui Laobaigan and an important reason for its rich and mellow taste. The unique feature of its production is the use of pure wheat medium-temperature koji without the need for wetting agents and no addition of mother koji. The moisture content during koji molding is low (30% to 32%). It is mainly produced using tray koji, with a small amount of ground koji as a supplement. Its characteristics are an elegant fragrance, natural harmony, a soft and mellow flavor, and a lingering aftertaste.

Laobaigan Old Fashioned
2 oz Hengshui Laobaigan, 1/2 oz simple syrup, 2 dashes Angostura bitters, Orange twist for garnish
Stir Laobaigan, simple syrup, and bitters with ice until well-chilled. Strain into a rock glass over a large ice cube. Express the oils from an orange twist over the drink and use it as garnish.
