Izumibashi Tonbo Sparkling Junmaishu is a delightful expression of the Izumibashi brewery’s dedication to producing high-quality sake through their hands-on approach to rice cultivation. By growing and polishing their own sake rice, the brewery emphasizes the importance of a farm-to-bottle philosophy. The name "Izumibashi" is a tribute to the Izumi River, which once irrigated their rice fields, and the brewery’s family name, Hashi, which together symbolize the strong connection between land and craftsmanship. This nigori sake, with its cloudy appearance due to light filtration, undergoes secondary fermentation in the bottle, resulting in a unique effervescence, heat-pasteurized to balance bright acidity with refreshing sweetness.
On the nose, Izumibashi Tonbo offers an intriguing bouquet of lychee, persimmon, pear, Italian parsley, juniper berry, and steamed rice. The palate is clean and invigorating, with a light sweetness, sharp acidity, and a touch of mineral astringency balanced by savory undertones.
