Jiugui Liquor is "high but not strong," with a mild stimulation that gives the impression of drinking liquor with a lower alcohol content (40–50 degrees). Jiugui Liquor Co., Ltd. is a leading Chinese brand in the rich fragrance Baijiu industry, renowned for its unique crafting process. The company combines traditional brewing methods from western Hunan with modern fermentation techniques, utilizing both large and small qu. By employing a formula that includes five grains—sorghum, glutinous rice, rice, wheat, and corn—Jiugui adopts a multi-grain saccharification production technology with small qu. This process involves soaking sorghum and steam-cooking grains, resulting in a complex grain aroma. The small qu fermentation and saccharification stage also harness microorganisms from the environment, setting it apart from the strong fragrance Baijiu crafting techniques.
The production of rich fragrance Baijiu employs medium to moderately high-temperature large qu fermentation, characterized by a longer cultivation time and temperatures reaching as high as 62°C. Jiugui uses mud pits for fermentation and quality artificial aging pits to ensure the liquor retains a clean and refreshing sensation. The Xiangxi Cave, embedded in geological strata, undergoes slow, uniform physical and chemical changes, allowing for continuous molecular bonding that naturally matures the liquor and enhances its taste and quality.
酒鬼酒股份有限公司独创中国馥郁香型白酒的酿造工艺,其旗下品牌酒鬼酒、内参酒、湘泉酒和洞藏酒均为馥郁香型白酒。馥郁香型白酒的酿制技艺是在传承湘西民间酿酒工艺秘方的基础上,大胆吸纳现代大、小曲工艺的优点,经过有机结合形成的创新工艺,使其在中国白酒业中独树一帜。该工艺采用高粱、糯米、大米、小麦和玉米五粮配方,并且是行业内首家采用小曲多粮糖化生产技术。高粱需要浸泡,粮食需清蒸,从而带来复合的粮食香气。小曲培菌糖化相当于二次制曲,再次网罗环境中的微生物,这是酒鬼酒生产工艺的重要特征之一,也是与浓香型白酒工艺的主要区别。
馥郁香型白酒的生产采用中偏高温大曲,培养时间较长,最高温度可达62 ℃,并结合架式与地面培养的立体方式。酒鬼酒使用的发酵窖池为泥质小窖,而优质的人工老窖则是形成酒鬼酒独特风格的基本保障。清蒸清烧工艺即将蒸粮与馏酒完全分开,有利于保持酒体的净爽感,操作方法与清香型白酒相似。湘西溶洞藏于地层,其内部气温一般不超过20度,湿度不低于80%,通过缓慢、均匀的物理化学变化,不断的分子缔合,使酒体自然老熟,从而改善酒的口感,提高酒的质量。
Jiugui Ginger Mojito
2 oz Jiugui Liquor, 1 oz fresh lime juice, 1 oz simple syrup, 4-6 fresh mint leaves, 2 slices of fresh ginger, Soda water, Ice cubes, Lime wedge and mint sprig for garnish
In a cocktail shaker, muddle the fresh mint leaves and slices of fresh ginger. Add Jiugui Liquor, fresh lime juice, and simple syrup to the shaker. Fill the shaker with ice cubes and shake well to chill the mixture. Strain the mixture into a glass filled with ice cubes. Top up with soda water and gently stir. Garnish with a lime wedge and a sprig of mint.

酒鬼酒姜味莫吉托
2 oz 酒鬼酒,1 oz 新鲜酸橙汁,1 oz 简单糖浆,4-6 片新鲜薄荷叶, 2 片新鲜姜片,苏打水,冰块,柠檬楔和薄荷枝,用于装饰
在鸡尾酒摇壶中,捣碎新鲜薄荷叶和姜片。将酒鬼酒、新鲜酸橙汁和简单糖浆加入摇壶中。加入冰块并摇匀以冷却混合物。将混合物过滤到装有冰块的玻璃杯中。加入苏打水并轻轻搅拌。用柠檬楔和一枝薄荷装饰并享用!
