Juyondai, produced by the Takagi Shuzo brewery in Yamagata, is one of the world’s most sought-after and expensive sakes, with a history dating back to 1615. While many brands in the sake industry are renowned, such as Dassai and Hakkaisan, Juyondai stands out for its unique combination of fragrant fruity aromas and a fresh taste that sets it apart from traditional sakes. The 14th generation of brewers at Takagi Shuzo has played a key role in its success, developing proprietary rice varieties and yeast strains to create a truly exclusive flavor profile. Despite its premium reputation, the brewery offers an entry-level option that is still considered superior to many other high-end sakes.
Juyondai's Yamadanishiki-based sake is characterized by its light, lemon-yellow hue and dense texture, with lactic (cream, yogurt) and fruity notes like apple, pear, and banana. Hints of citrus, passion fruit, and vanilla further enrich its nose. On the palate, the semi-dry sake reveals a balance of fine umami, moderate acidity, and well-integrated alcohol, with lactic and fruity flavors lingering throughout. Its clean, slightly bitter finish is accentuated by refreshing citrus notes. This complex, well-balanced sake pairs excellently with sashimi, seafood dim sum, marinated cockles, crab, Thai-style shrimp, and braised poultry.
