Founded in 1573 by the Yanagi family in Ishikawa Prefecture, Kikuhime Brewery crafts sake using 100% top-grade AAA Yamada Nishiki rice from Yokowa, milled to 65%. Their Kinken (“Golden Sword”) sake, named after the ancient Kinkengu shrine, is a blend of junmai sake aged for 1-2 years in horo tanks (ceramic-lined steel tanks) at low temperatures. This soft sake reveals complex flavors of honeycomb, pear, cream, roasted almonds, and nougat. As it opens in the glass, delicate aromas of pear blossom emerge, adding to its refined profile.
This versatile sake can be enjoyed chilled, where its intricate flavors shine, or gently warmed to deepen its flavors and enhance its sweetness. The use of medium-hard Hakusan underground well water contributes to its unique character. Each season, Kikuhime Brewery visits the Kinkengu shrine to pray for a safe brewing year, honoring their tradition and dedication to quality.
