The nose on this wonderfully packaged sake is a unique collection of honeydew melon, green apple, nougat, and cream tones. Talk about a different Daiginjo! No, this is no fruit bomb, or some silly sweet brew. It is however a rich and round sake that has a complexity that would make big red wine drinkers drool. This brew is impactful from the first sip, to the very long and active tail, with lots of upfront character and flavors that boarder on far richer sakes. Look for cocoa, nougat, sweet rice, and bread crust flavors that bounce on a lively acidity play. This is not a chunky rich Junmai and as such it drinks with a clean attitude that would appeal to anybody looking to try a different Daiginjo with deep complexity.
