Laws Whiskey House's Four Grain Bourbon Finished in a Cognac Foeder is a testament to the Denver-based distillery's commitment to innovation and craftsmanship. Founded on the principle of continual improvement, Laws Whiskey House has meticulously developed this expression over several years, drawing inspiration from traditional Cognac production methods. The journey begins with their signature Four Grain Straight Bourbon, composed of 60% corn, 20% heirloom wheat, 10% heirloom rye, and 10% heirloom malted barley, aged for a minimum of two years in new American oak barrels. Select barrels are then transferred to French oak casks that previously held Cognac for secondary maturation. The final step involves marrying the whiskey in a 50-year-old French oak foeder, employing a modified solera process where only a portion is harvested annually, allowing the remaining whiskey to blend with future batches, enhancing complexity and depth over time.
This meticulous process results in a bourbon with a rich and evolving flavor profile. On the nose, it presents aromas of stewed fruit and black tea, while the palate reveals flavors of spiced apple butter, toasted wood, and raisin, culminating in a luxurious, rich finish. The influence of the Cognac casks imparts additional layers of complexity, introducing notes of fig jam and sweet, nutty malt, with a dry finish subtly influenced by the French oak. Bottled at 47.5% ABV, this bourbon is versatile in its pairing potential. It complements a range of dishes, from roasted duck and glazed pork to rich desserts like bread pudding or dark chocolate torte, making it a distinguished choice for both connoisseurs and those new to whiskey exploration.
