Masumi Arabashiri "First Run" is a seasonal Junmai Ginjo Nama Genshu sake produced by the Miyasaka Brewing Company in Nagano Prefecture, Japan. Established in 1662, the brewery is renowned for its discovery of the Masumi No. 7 yeast in 1946, a strain celebrated for its gentle aroma and widespread use in sake production. "Arabashiri," meaning "First Run," refers to the initial pressing of the sake during the brewing season, capturing the freshest flavors. This unpasteurized and undiluted sake is crafted using local rice varieties, Sankeinishiki and Hitogokochi, polished to 55%, and fermented with the proprietary Masumi No. 7 yeast. It boasts an alcohol content of 17% and is available from November to April.
