Product details

Mimurosugi Dio Abita is a testament to the rich heritage and meticulous craftsmanship of Imanishi Shuzo, a brewery established in 1660 in Nara Prefecture, Japan. Nestled at the foot of Mt. Miwa, a mountain revered as the dwelling place of the sake deity, the brewery draws its pristine brewing water from this sacred source, often referred to as the "water of the gods." This exceptional sake is crafted using Yamada Nishiki rice polished to 60%, and it undergoes a single heat treatment without carbon filtration, preserving its natural depth and character. The result is a Muroka Genshu sake with a refined profile and an alcohol content of 13%.

Upon pouring, Mimurosugi Dio Abita greets the senses with a fresh, lemonade-like Ginjo aroma, complemented by notes of freshly cut green apple and juicy orange. The palate experiences a harmonious blend of well-rounded sweetness and umami, leading to a clean, crisp finish with refreshing acidity. This versatile sake pairs beautifully with a variety of dishes, including white fish carpaccio, fresh spring rolls, Peking duck, and aubergine with miso sauce. For optimal enjoyment, it is best served chilled, allowing its bright, citrus-like freshness to shine.
