Minanogawa Muroka Junmai Ginjo is a refined sake produced by Inaba Shuzo, a historic brewery established in 1867 in Ibaraki Prefecture, Japan. Under the leadership of sixth-generation brewer Nobuko Inaba—one of the few female toji (master brewers) in Japan—the brewery has embraced traditional, hands-on brewing techniques, eschewing machinery to maintain the integrity of their craft. Utilizing pure spring water from Mount Tsukuba and locally sourced sake rice, Inaba Shuzo is committed to sustainability and quality. In 2019, the brewery pledged to use only rice grown in the terraced paddies near the brewery, reflecting their dedication to expressing the terroir of the region.
This Junmai Ginjo Muroka sake is unfiltered (muroka), preserving its natural flavors and aromas. Crafted with Hitachi Nishiki rice polished to 55%, it offers a harmonious balance of fruit-like sweetness and a clean, lingering finish. Tasting notes include hints of apple, muscat grape, and banana, with a soft texture and gentle mouthfeel.
