Focusing on sustainable viticulture across 16 hectares of premier and grand cru vineyards, Maillart cultivates rare varieties like Petit Meslier alongside Pinot Noir and Chardonnay. The grapes are harvested early and vinified with great care, ensuring quality throughout the process. After fermentation, the champagne undergoes a second fermentation in the bottle and a 3-year aging on the lees, resulting in a refined, exquisite wine.
