Doburoku is a traditional unfiltered sake, where the fermented moromi mash is bottled without straining, resulting in a cloudy, rich texture. This Uguisu-branded doburoku is made using time-honored methods, crafted as much by hand as possible. Its naturally abundant lactic acid gives it a refreshing balance of sweet and sour flavors, delivering a vibrant and smooth drinking experience. Perfectly suited for pairing with rich, flavorful dishes, it complements canapés with berries, tropical fruits, and cream cheese, as well as avocado salads and gratins.
The Chikugogawa River in Kyushu is home to the Yamaguchi Shuzojo brewery, which produces Niwa no Uguisu (Garden’s Nightingale) sake. The brewery's origins trace back to the family’s love for watching nightingales drink from the garden’s pure water, inspiring the 6th generation head, Yamaguchi Risuke, to use that same water for sake brewing. Today, each of the 17-20 sake varieties released annually features a unique nightingale design, symbolizing the brewery’s connection to nature. According to 11th generation brewer Tetsuo Yamaguchi, the three key elements that set Niwa no Uguisu apart are the rice, water, and people, with the motto that food always comes first and sake second.
