Ohyama Tokubetsu Junmai Nigori Sake, affectionately known as "Big Mountain Cloudy," hails from the esteemed Kato Kahachiro Sake Brewery in Tsuruoka City, Yamagata Prefecture. Established in 1872, this brewery has a rich history of crafting high-quality sakes that reflect the region's pristine natural environment. The "Tokubetsu" (special) designation signifies the use of premium ingredients and meticulous brewing techniques. This nigori (unfiltered) sake is crafted from locally sourced Haenuki rice, polished to 65%, and fermented using Yamagata KF-NA yeast, resulting in a harmonious blend of tradition and innovation.
Pouring with a characteristic cloudy appearance, this sake offers tender notes of orchard fruits such as apple, pear, plum, and white peach, complemented by a refreshingly tart hint of fresh yogurt. The palate is greeted with a creamy texture, balanced sweetness, and flavors of underripe peach and cedar, leading to a clean, dry finish. Unlike many nigori sakes that lean towards sweetness, "Big Mountain Cloudy" is drier, making it an elegant and versatile choice.
