Peter Dipoli's Iugum 2018 is a distinguished blend of 70% Merlot and 30% Cabernet Sauvignon, embodying the winery's commitment to producing exceptional red wines in Alto Adige. Established in 1987, the Dipoli estate began with the acquisition of vineyards in Penon, near Cortaccia, and later expanded to include the Iugum vineyard in Magré. Situated at elevations between 300 and 350 meters with east-southeast exposure, the vineyard's clay and silt-rich soils, coupled with the region's warm climate, provide an ideal terroir for cultivating Bordeaux varieties. The name "Iugum," Latin for "yoke," reflects both the union of these grape varieties and historical references to vine training methods.

In crafting Iugum 2018, Merlot grapes are harvested from mid-September, followed by Cabernet Sauvignon in mid-October, with each variety vinified separately. Fermentation occurs in open 40-hectoliter wooden vats over approximately ten days, incorporating twice-daily punch-downs. Both wines undergo malolactic fermentation in barriques, with Cabernet Sauvignon aged for 12 months in new barrels, while Merlot matures in second and third-use barriques. After blending, the wine rests in stainless steel vats for 60 days before bottling and is then aged an additional 24 months, totaling four years from harvest to release. This meticulous process yields a wine of deep ruby hue, offering aromas of ripe forest fruits, subtle spices, and aromatic herbs. On the palate, it presents a harmonious balance of robust tannins and vibrant fruit, culminating in a long, pleasantly almond-tinged finish. Iugum 2018 pairs exceptionally well with hearty dishes such as roast pork with juniper berries, grilled meats, and aged cheeses, and it is recommended to serve at 16–18°C.
