Established in 1688. Mitsutake Brewery is located in Kashima city, Saga. The area around the brewery, called Hizen Hamashuku, is also known as Sakagura Dori (Sake Brewery Street), a very old-fashioned town with sake breweries, soy and miso companies, as well as samurai residences. Mitsutake Brewery brews not only sake, but shochu and gin as well. They are also known as “Mitsutake Sake School” since many brewers learn their techniques and become master brewers to work at other breweries.
This sake is brewed from two kinds of rice, Yamadanishiki for koji and Yumeshizuku rice, which are fermented together. Two different kinds of yeast are used as well, giving the sake a complex, refreshing aroma. This sake has light fruity notes of green apple and subtle herbaceous aromas with a crisp and refreshing texture. Enjoy this sake with your favorite seafood dishes such as carpaccio, seaweed salad, sashimi, sushi or simply grilled or fried fish.
