Shibui (an aesthetic term that corresponds to "timeless" in Japanese) is a Japanese whisky brand that was launched in 2020. The brand is focused on sourcing exceptional whisky from Japanese distilleries, collaborating with them for the distillation, maturation, and marrying of each different release. Whisky from Niigata and Okinawa is at the core of their lineup, each expression being bottled without chill-filtration and added coloring. Shibui 15-Year-Old Single Grain Whisky was double distilled in Okinawa, at the Masahiro Distillery from premium Indica long grain rice using a stainless-steel pot still. Then, the whisky spent 15 years in first-fill fino and manzanilla sherry oak casks before being bottled at 86 proof.
The nose is rich with caramel, orange zest, berries, and a touch of tropical fruit. The palate is complex with caramel, milk chocolate, dark fruits, pear, macadamia nuts, and a touch of pepper, leading to an oaky and gently spicy finish. This whisky is perfect for sipping neat or on the rocks and pairs well with rich desserts like dark chocolate torte or a cheese platter with figs and nuts.
