Miyao Sake Brewery, established in 1819, is renowned for producing some of Japan's finest sake, drawing from centuries-old traditions and innovative practices. Located in a region enriched by the pure water of the Asahi mountain range and its pristine forests, the brewery harnesses the area's unique climate—marked by heavy snowfall and fluctuating temperatures—to craft its exceptional sake. Miyao was among the pioneers of Junmai sake in 1965, and today, they primarily use Gohyakumangoku rice, a regional favorite, along with Koshi Tanrei, a newer variety. For their prized Daiginjo sake, the brewery sources the highly regarded Yamada Nishiki rice from Hyogo, elevating their offerings to the highest standards.
The brewery's Daiginjo sake is meticulously crafted, with Yamada Nishiki polished down to 38% for a refined, elegant result. By pasteurizing the sake only once after pressing and bottling it directly for refrigerated storage, Miyao locks in delicate aromas and nuanced flavors. The result is a smooth, clean, and sophisticated Daiginjo with a crisp finish. Its light, refined profile pairs beautifully with seafood dishes, making it an ideal companion for sushi, sashimi, grilled fish, and seafood salads.
