Founded in 1819, Miyao Sake Brewing Company has a long-standing tradition of producing high-quality sake, rooted in its early practices and the "Secret Instruction of Sake Brewing" written by the brewery's second-generation leader, Matakichi Miyao. In the 1960s, Miyao was among the first breweries to produce Junmai sake, with their signature "Shimeharitsuru Jun" being a hallmark of their craftsmanship. The brewery sources pristine subterranean water from the Asahi mountain range and primarily uses the high-quality "Gohyakumangoku" rice grown in Niigata Prefecture, as well as "Koshi Tanrei" in recent years. For their Daiginjo sake, they select premium "Yamada Nishiki" rice from Hyogo Prefecture, demonstrating their commitment to the finest ingredients.
Shimeharitsuru sake, known for its soft and refined flavor, also serves as the base for their plum liqueur, made with large Japanese Shirakaga plums and sugar. Soaking the plums in sake rather than shochu imparts a delicate flavor, allowing the natural sourness and aroma of the plums to stand out. This liqueur pairs beautifully with a wide range of foods, from cheese, nuts, and dried fruits to richly flavored dishes like fried chicken and Mapo tofu.
