Senkin Classic Kame no O is part of the brewery's "classic" series - sake made using traditional brewing methods. Brewed astoundingly using 100% ancient rice Kame no O - a finicky specimen that requires 100% by-hand cultivation.
A deep and rich aroma is filled with hints of lemons and candy. This Sparkling sake is a refreshing dance of small bubbles with a gentle sweetness. There are lots of subtle flavors such as steamed rice, hay, citrus, and absolutely no aftertaste.
This sake boasts a creamy texture with ample umami and superbly balanced acidity that makes it so easy to drink we can’t get enough. Extremely food friendly, and recommended warm, on a flat ceramic vessel if you have one.

Although from a reputable brewery from a very historic region, this is not your typical junmai daiginjo. On the palate, it has a layered depth from the Omachi rice grown in Bizen-no-kuni in Okayama prefecture — the birthplace of this heirloom strain.
“Hitotsubi” has a medium intensity aroma and texture with some light weight. Initial flavors of banana bran, like the top of a muffin, gives way to some umami and dried fruit notes.

Plum mixed with 100% Junmai sake. Unlike plum wine made with distilled spirit, it doesn't have that alcohol smell. Very mild aroma of plums, soft on the palate. Great aperitif as well as digestif with ice cream.
This junmai ginjo is made entirely from "Aizan," a rare type of sake rice, for both koji rice and kake rice. It is bottled only once after the tank has been filled. It has the characteristic bright and rich flavor of "Aizan" and a harmonious acidity.
