Named for the famed samurai broadsword, ‘Katana’ Junmai Ginjo is similarly sharp, dry, and bold. Full-bodied with notes of melon and almond, with almost no perceptible sweetness. An excellent pairing for richer cuisine like yakitori.
Pale silver straw color. Aromas and flavors of pineapple upside down cake, ambrosia, kiwi, jicama, and rice candy wrapper with a satiny, bright, dry-yet-fruity medium body and a tingling, engaging, long Asian pear, pineapple custard.

This sake - a part of Senkin's "Modern" sake series that utilizes modern brewing methods - is a combination of Japan's historic first sake rice (Omachi) and Senkin Brewery's cutting-edge technique and technology.
This Sake is very clean in taste, with the rice suggesting a subtle sweetness in the mouth. A very light and smooth sake to enjoy with sushi, sashimi and other fine dishes.

"Yumeno Kaori" rice was developed by the Agricultural Research Centre of Fukushima. This special Sake rice is suitable for cultivation in this particular region's climate. When this rice is brewed with "Yume Yeast".
