The clear mineral-rich water from Ibo River is used by Tatsuriki for both growing the rice used in the sake, the sake itself. The same river feeds into the Harima Nada sea where oysters prosper thanks to the nutrients provided by the Ibo River.
Suigei Brewing produces several Junmai Daiginjo sakes, each with its own character; then combines them to create this entirely unique Junmai Daiginjo that is both aromatic and crisp.
The aroma calls clearly to ripe melon. On the palate, a bit of sweetness, gentle umami and soft acidity, but with a long finish that is well balanced and elegant. Begs to be served in a wine glass in order to fully experience it's unique aromas.

This is an official collaboration between the hit anime and manga series “Attack on Titan,” and Japanese sake brand Daina. The second in the series, this sake features the character Mikasa.
“Hitotsubi” has a medium intensity aroma and texture with some light weight. Initial flavors of banana bran, like the top of a muffin, gives way to some umami and dried fruit notes.
The flagship brew of Chiyomusubi, this sake is made with Goriki sake rice that is unique to Tottori Prefecture. Chiyomusubi “Goriki 50” toes the line between light and rich, and does so with a slightly dry touch.
