This mixing of old and new gives us a vivid sake with pleasant caramel apple on the nose and a pure, mineral texture that can only be described as fully satisfying. Expect light flavors of candied peach and apricot that fade into a fulfilling finish.
This sake is smooth and graceful, like the sekirei (Japanese wagtails) that swoop and glide over the Nishikigawa river that flows next to the brewery. Has an elegant, satisfying aroma and a beautiful, long finish.
