The Hattannishiki rice comes from Hiroshima Prefecture and is carefully prepared to produce a sake with a suppressed melon aroma, but deep flavor. A soothing mix of cucumber and melon, cooked apple and a dash of sansho pepper await you with each sip.
Nose full of malt and alluring honey, which goes along with the slight gold tint of the sake. On the tongue this sake delivers a bright macadamia nut flavor backed by caramel sweetness with just a touch of astringency.

A delicate balance of robust and delicate, full notes of cereal grains and cremini mushrooms in a light and airy structure. Warming this sake adds a touch of fruity sweetness to the toasty notes, making us think of banana bread, fresh from the oven.
The aroma calls clearly to ripe melon. On the palate, a bit of sweetness, gentle umami and soft acidity, but with a long finish that is well balanced and elegant. Begs to be served in a wine glass in order to fully experience it's unique aromas.
This kijoshu is made by incorporating junmai sake (instead of water) during the last step of fermentation. Monsoon Kijyoshu has a gentle acidity similar to prized noble rot wine.
