Founded in 1885, the brewery is currently helmed by brewmaster Rumiko Moriki, the fourth-generation owner and Japan's first female toji (master brewer). Moriki Brewery is renowned for its commitment to traditional methods and minimal intervention, often cultivating its own organic rice and employing labor-intensive, handcrafted brewing techniques. This dedication to craftsmanship is evident in the "Sublime Beauty" sake, which utilizes premium Yamada Nishiki rice polished to 90% remaining, preserving the grain's rich character.
