Tatenokawa Brewing Company went to great lengths to create this junmai daiginjo, working for more than three years to revive the Soube Wase sake rice used in its brewing. Polished down to 18% of its original size, this rice lends a refined, rustic nature to the sake, which deepens beautifully with age.
