The Vin Santo of Villa Travignoli was born in the hilly areas of Pelago, in the Chianti Rùfina area.
This sweet wine is mainly made with Malvasia and Trebbiano grapes, harvested towards the second half of September. After the harvest, the grapes are left to dry on reed for 4-6 months, then pass into wooden barrels to carry out the pressing and fermentation phases. Finally, the must is left to mature for about 5 years in barrique before being bottled.
It is characterized by a golden color and a fine and intense aroma of candied fruit and honey. On the palate it stands out for its soft peculiarities, thanks to a bewitching silkiness and a refined sweetness.
It marries divinely with dry biscuits, on all the cantucci of Prato. Interesting pairing with fresh goat cheeses.
