Xifeng Jiu embodies the essence of time-honored craftsmanship, utilizing traditional fermentation methods with a blend of barley, wheat, and peas as starter materials and sorghum as the primary brewing ingredient. Rice husks play a crucial role in adjusting the starch concentration and acidity of the mash, promoting efficient distillation and fermentation. The ideal husks are petal-shaped, non-sticky, and elastic, contributing to the liquor's clarity and purity. Water used in the brewing process is sweet and transparent, aiding the saccharification of koji enzymes, while the koji itself, primarily made from barley, is meticulously fermented and stored to enhance the liquor's quality and flavor profile.

The production of Xifeng Jiu employs a unique technique that dates back to the Tang Dynasty, involving the use of a large liquor container known as JiuHai. This intricate process takes approximately six months, resulting in a distinctive vessel characterized by its rectangular shape, round mouth, curved shoulders, deep belly, and flat bottom. The JiuHai allows for both internal and external ventilation, which facilitates flavor enhancement—leaking when in contact with water and developing a fragrant aroma when in contact with wine. This method contributes to the signature Feng-flavor style that defines Xifeng Jiu.
