Moonlight (Tsukiakari) is a superb example of a full-flavored, sweet nigori (cloudy) sake from Yamatogawa Shuzo. Made by coarse-filtering fermented sake, nigorizake retains rice lees, resulting in a dense mouthfeel, a heady fragrance, and a delicious, rice-forward sweetness. Moonlight is full-bodied and weighty on the palate, with high acidity and amino acidity elegantly balanced with the residual sweetness of the rice. The rice used in Moonlight is home-grown Fukushima rice, Yume no Kaori, known for its large shimpaku and low protein content, contributing to the sake's sweeter profile.
In terms of texture, Moonlight is thick enough to feel the rice lees in your mouth, yet not so thick as to noticeably change the liquid's viscosity. The rice lees are generally larger than in many nigorizake, making it feel more like rice grains suspended in sake rather than a thicker liquid, similar to amazake. Best served chilled, Moonlight's thick and silky texture pairs wonderfully with spicy foods, enhancing the dining experience with its rich and balanced flavors.
