Celebrating the artistry of their master brewer "Toji," Zaku honored Tomohiro Uchiyama's
choice of his favorite tank for this brew, aptly named Selection N. The nose on this very
special limited-run sake offers an elegant collection of aromas including grape, pear, orange,
pineapple, papaya, perfume, and rock sugar. This Daiginjo is smooth, round, and gentle,
with a slight spritz, and glides lightly and effortlessly through the palate. It presents layers of
soft flavors such as papaya, ripe melon, vanilla, rock sugar, pineapple, and pear juice, which
are juicy and slippery rather than bulky.
The masterpiece of this selection lies in its delicate fruit tones like Mandarin orange, coupled
with a delightful umami play that culminates in a quick and dry finish. Best served chilled in a
white wine glass, this sake excels on its own and pairs beautifully with gentle fare such as
sashimi, poached white fish, tofu, and fruit plates.
